The Magic of Truffles

A Culinary Treasure: Truffles are one of the most sought-after delicacies in the culinary world. These subterranean fungi grow in symbiosis with tree roots, primarily in regions of Spain, Italy and France. Truffle is known for their intense aroma and earthy flavor, truffles are often referred to as the “diamonds of the kitchen.”

Adding Truffle to Gouda: The addition of truffle to artisanal Gouda cheese elevates it to a new level of gourmet indulgence. During the cheese making process, we carefully integrate the truffles into the cheese, allowing their distinct flavor to spread throughout the cheese as it ripens. The result is a harmonious blend of creamy Gouda and the unmistakable essence of truffle.

The History of Gouda Cheese

Origins in the Netherlands: Gouda cheese originated in the medieval town of Gouda in the Netherlands. The first record of Gouda dates back to the 12th century, and it has become one of the most famous cheeses worldwide. The cheese derives its name from the town where people historically traded it, not from where they produced it.

Traditional Gouda Cheese Production at the Cheese Farm

Authentic Gouda farmer’s cheese is made from cow’s milk and undergoes a meticulous process to develop its characteristic flavor and texture. After curdling the milk, the curds are cut and heated, which helps to release the whey. The curds are then pressed into round molds and soaked in a brine solution to enhance the flavor. The cheese is aged for various periods, ranging from a few weeks to several years, resulting in different varieties from young to very old.

Handcrafted Excellence: The Artisanal Cheese-Making Process

Generations of artisans have passed down the craft of Gouda cheese-making, focusing on quality, tradition, and authenticity. Unlike mass-produced cheeses, cheesemakers produce artisanal Gouda in small batches, paying close attention to every detail. This hands-on approach ensures that each wheel of cheese is unique and of the highest quality.

Quality ingredients: Traditional Gouda cheese makers process cow’s milk into cheese from the milk of their own pasture-raised cows This high-quality milk contributes to the cheese’s rich, creamy texture and complex flavors. Furthermore, the use of natural rennet and traditional methods further distinguishes artisanal Gouda from its industrial counterparts.

The food colouring used in green pesto cheese from a cheese factory.

You have probably noticed that our cheese has a green coating only on the outside and the cheese itself is not coloured. The reason is that we do not use food colours in our artisan cheeses.

Does the addition of a food colouring have any effect on the flavour of the cheese? No, the colouring is only added to make the cheese more visually appealing to consumers, giving them the impression that the cheese is “well-filled” with pesto.

With many factory cheese brands, green pesto cheese is available in the most “remarkable” shades of green. The food colouring used in factory-made cheese to make the cheese green is Chlorophyllin E-141.

Are colouring additives used in your green pesto cheese?

No, we do not use colourings in our Craxi farm cheese. In terms of taste, adding colourings to cheese has no effect whatsoever. Adding colourings to cheese is purely cosmetic to make the cheese more visually appealing to consumers, giving the impression that the cheese in this case is “well-filled” with green pesto.
