What is the maturation time of a authentic old Gouda cheese?
How long does traditional Dutch Gouda cheese have to mature before it can be called “old”? In the Netherlands, artisan Gouda cheesemakers only label a cheese as “old” after it has matured naturally for 12 months. Fun fact: This rule only applies to the Dutch word “oud.”
You’ve probably never wondered why well-known Dutch brands of industrial Gouda cheese choose the English word “Old.” Do they only use it for export? No, they use it in the Netherlands too!
Could it be that this cheese hasn’t been aged for at least 12 months according to the Dutch standard and can’t be offered in the Netherlands under the name “oud”? What do you think? 😉
The answer to this is quite simple: many industrial Gouda cheese producers use maturation accelerators! These ripening accelerators ensure that industrial cheese has a taste that resembles 12-month matured cheese after a shorter maturation period of 8 months, which should give the consumer the impression that he is consuming 12-month naturally matured cheese.

We often get questions like ‘Which Gouda cheese contains gluten?’ or ‘Which Gouda cheese is gluten free?’ The answer is very simple: Our Gouda cheese does not contain gluten (contains no grain products).
Dairy products with additives such as custard, fruit quark, cheese spread, processed cheese, may contain gluten. Check the ingredients of these products on the label.
What are gluten actually?
It is a protein that occurs naturally in wheat, spelt, rye and barley. Gluten is also found in products made from these grains. Think of bread, crackers, pizza, pasta, breadcrumbs, biscuits, cake and pie. It is also hidden in products where you would not immediately expect it. For example, in the ingredients of soups (binder, vermicelli or meat), in sauces, some sweets, ice creams and beer.
What about grated Gouda cheese?
If you want to buy the bags of pre-packaged grated Gouda cheese (industrial Gouda) in the supermarket, it is wise to first check the ingredients label.
If you’ve ever wondered why the cheese from the pre-packaged bags of grated cheese ‘flows’ so well and does not clump into a ball! In the dairy industry additives are used as a anti-caking agent like potato starch and cellulose. Cellulose is made from wood pulp and some cheese brands contain up to 4% cellulose.
If you want to skip the cellulose, you can also simply opt for our old Gouda farm cheeses, such as our 12, 24 or 36 month matured Gouda cheese, and grate it yourself!
Freezing grated Gouda cheese is very well possible in handy portions This way you always have grated cheese on hand for your cheese sauce or casseroles. When you defrost grated cheese, let it defrost slowly in the refrigerator but we advise not to do it with large pieces! It may change the texture, making it crumblier when you defrost it.

Lactose intolerance is an annoying intolerance to live with. But the good news is that there are many lactose-free dairy products on the market today. We are happy to explain to you when Gouda farm cheese is lactose-free in the ripening process.
What is lactose and lactose intolerance
Lactose is a type of sugar that occurs in milk and dairy products. That is why it is also called milk sugar. This sugar is also found in certain cheeses. For example, young and young matured cheese sometimes still contain lactose. However, as cheese matures, the milk sugars are converted into lactic acids, which reduces the lactose content. Some people have difficulty digesting lactose; this is called lactose intolerance. In this condition, people are more likely to experience stomach problems due to the sugars that are not properly broken down in the body.
But how do you know if the Gouda farm cheese you want to eat is lactose-free?
If you follow the following guidelines, we are on the right track…..
Cheese is made by adding rennet to milk. Rennet ensures that the solid part (curd) of the milk separates from the liquid (whey). And the liquid contains the most lactose. Hard cheeses contain little liquid and therefore less lactose. In addition, the lactose is converted into lactic acid during ripening, i.e. because the lactose is converted during the ripening process of the cheese into lactic acid, we can say that mature Gouda cheeses are the key if you have a lactose intolerance and want to eat cheese.
How much lactose one can eat varies per person. Roughly speaking, we can say that with hard cheeses (from mature) the cheese is almost lactose-free (approximately 0.1 gram per 100 grams of cheese).

The degree to which someone is lactose intolerant varies from person to person. Most people do not experience any complaints with cheese that contains less than 1 gram of lactose per 100 grams of cheese. But one person can tolerate much less, and another a lot more. It is therefore important that you get a feeling for what you can and cannot do.
Cheese: Are There Health Benefits
It is even smart to eat cheese! Cheese is rich in various vitamins such as vitamin A, B2 and B12. In addition, it is a source of minerals such as calcium, phosphorus and magnesium, zinc and selenium. Cheese contains protein and fat and little or no carbohydrates.
Do you suffer from lactose intolerance? Don’t worry, because you can still enjoy cheese! From mature cheese, the milk sugars are converted into lactic acids, so that there is no more lactose in the cheese. This means that mature Gouda cheese are lactose-free.

The Origin of Leyden Cheese: A Dairy Delight That Started with Butter
Leyden cheese, is a unique and flavorful cheese hailing from the Netherlands, particularly the province of South Holland. Known for its firm texture and the distinctive addition of cumin seeds, this cheese has a rich history that surprisingly begins with an entirely different dairy product: butter.
A Byproduct of Butter Making
During the 17th century, dairy farmers in the Leiden region focused primarily on butter production. Butter was in high demand across Europe, as it was a key ingredient in cooking and baking. However, producing butter left behind a significant amount of skimmed milk, which was lower in fat but still rich in nutrients. Rather than letting it go to waste, the resourceful Dutch farmers sought a way to use this leftover milk efficiently, leading to the creation of Leyden cheese.
The Milk: Rare Old Dutch Breed
Blister head cows and leyden cheese
The milk used for the production of this butter came from the blister head cow (Blaarkop koe). From the 17th century onwards, the Blaarkop was found en masse in the polders around Leiden, when it turned out that its milk produced the most delicious butter and cheese. And the meat was also praised for its refined taste.
Rare old Dutch breed The Blaarkop is now an endangered old Dutch cattle breed. There are currently only about 2000 purebred animals registered in the Netherlands, which is less than the number of pandas in de world!
The Origin of Leyden Cheese
Leyden cheese, hails from the Leiden region in the province of South Holland. The cheese’s history can be traced back to the 16th century, when Dutch farmers began experimenting with ways to improve their cheese-making process. Unlike other Dutch cheeses such as Gouda or Edam, Leyden cheese incorporates cumin seeds, giving it a distinct, spicy aroma and taste.

Why Leyden Cheese Became Popular: The Heyday
Leyden cheese became particularly favored in the Netherlands and Germany, where it was often enjoyed as a table cheese, grated into dishes, or paired with hearty bread and beer. Over time, the cheese’s distinctive taste and texture solidified its place in Dutch culinary culture, making it a staple in both local markets and international trade. Additionally, the cumin seeds provided not only a pleasant flavor but also natural preservatives, helping to keep the cheese fresh for extended periods.
Several factors contributed to the rise in popularity of Leyden cheese. Firstly, its lower fat content (30+) made it a practical choice in a time without refrigeration. We can say that during the United East India Company period ( VOC 1602–1800) the production of leyden cheese was at its peak.
In the VOC period, Leyden cheese was a source of protein for the crew on long sea voyages. Due to the low fat content, the cheese had a long shelf life, did not sweat and did not melt at tropical temperatures. Because of these properties of the cheese, the VOC ordered around 3 million kilos annually.
In this period there were about 700 farmers in the Leiden region who made the Leyden cheese. Currently there are still 12 cheese farmers in the Leiden region who make the original Leyden cheese and butter in the traditional way. Most of them still use the milk of the Blaarkop cow.
The Unique Characteristics of Leyden Cheese
Leyden cheese is semi-hard, with a firm and slightly crumbly texture. The cheese is typically made from partially skimmed cow’s milk, giving it a lower fat content compared to richer cheeses like Gouda. The addition of cumin seeds imparts a warm, slightly nutty, and earthy flavor.

Leyden has a fat content in the dry matter of at least 30 percent (30+).
Gouda cheese has a fat content in the dry matter of at least 48 percent (48+).
Cheese wheel shape:
Leyden cheese can be recognized by one straight and one round shoulder.
Gouda cheese can be recognized by two round shoulders (two round shoulders is only allowed for Gouda cheese).
Cheese wheel color:
Leyden cheese has a characteristic red crust. In Leyden cheese, two keys are pressed into the crust. These are the keys from the coat of arms of Leiden.
Gouda cheese is known for its round shape and yellow color.
